Traditional Yankee Fish Cakes

Traditional Yankee Fish Cakes

      Ingredients:

  • 1 lb. Potatoes, boiled and mashed

  • 1/2 cup Fresh Parsley, chopped

  • 1 lb. Salted Cod or Pollock, soaked, skinned, and boned Salt and Pepper to taste

  • 3 Eggs, beaten

  • Oil for frying

  • 1 small Onion, chopped

  • Optional ingredients: dry mustard, cayenne pepper, sour cream, fresh bread crumbs, 1 Garlic Clove, minced

      Directions:

  • Drain the salted fish well and then shred it.

  • Combine all the ingredients except the oil. Form into cakes using 2 tablespoons of the mixture per cake. Fry in hot oil until deep brown.

  • You can add a little dry mustard, a pinch of cayenne pepper and a little sour cream for extra richness.

  • Another option is to coat the cakes in fresh bread crumbs before frying.
