Arroz Con Gandules (Rice w/Pigeon Peas) Recipe

INGREDIENTS: |

Water, rice, pigeon peas, onions, red peppers,
green peppers, tomato paste, pork, lard, salt, dehydrated garlic,
olives, annatto, culantro(recao), spices. |

|
|
|
|

|
COOKING INSTRUCTIONS: Defrost in cooler 24 hrs
before boiling. |

* Prepare a large pot with rapidly boiling water. |
|
* Boil thawed product for approximately 12 minutes |
|
(Minimal internal temperature of 165*F) |
|
* Remove from pot and carefully cut one corner of the bag with
scissors. |

* Empty contents into serving pan. |
|
|
|
The product should be kept in the hot case and maintained above
140*F. Stir the |
|
product every half hour. Product maybe refreshed with hot water. |
